5th Avenue Bars

If you’ve never had a 5th Avenue Bar, they’re kind of like Butterfingers – but maybe better.

INGREDIENTS

135g (1/2 c) creamy peanut butter

110g (1/2 c) sugar

86g (1/4 c) light corn syrup

60g (1/4 c) water

46g (1/4 c) chocolate chips or melting wafers


DIRECTIONS

Grease a 4×4 baking pan and line it with greased parchment or waxed paper.

Place the peanut butter in a large bowl and set it aside.

In a large saucepan over medium heat, combine the sugar, corn syrup, and water.

Bring it to a boil, stirring constantly.

Place a lid on the saucepan for a few minutes to wash down the sides of the pan.

Insert a candy thermometer and cook until the mixture reaches 300°, stirring constantly.

Microwave the peanut butter until it is melted, then pour the hot syrup mixture over the peanut butter and mix well.

Pour the mixture into the 4×4 pan and spread it evenly.

Once it starts to set, score it with a sharp knife. This will make the cutting a little easier once it fully sets.

When the candy has cooled completely, remove it from the pan and cut it in as many pieces as you’d like.

Put the pieces on a baking rack over some SilPat, parchment, or waxed paper.

Melt the chocolate.

Place the melted chocolate in a zip top bag, then pipe it over the candy bars, and leave them until the chocolate is set.
