Fifteens

An (almost) authentic Irish recipe that’s perfect for a leprechaun trap.

Buy Me A Coffee

INGREDIENTS

3/4  cup(225 g) of sweetened condensed milk

10 1/2 sheets (170 g) of graham crackers

11 (170 g) shortbread cookies – these are Keebler Sandies

15 marshmallows

15 maraschino cherries

1 cup (75 g) of shredded coconut

1/2 cup (90g) of dark chocolate melting wafers

SUPPLIES

A plastic bag

A rolling pin

Kitchen shears

A large bowl

A spatula

Some plastic wrap

A piping bag

DIRECTIONS

Use a rolling pin to crush the graham crackers and shortbread cookies.

About half should be fine crumbs and half should be small chunks. The crumbs help bind everything together and the chunks provide some crunch.

Cut each marshmallow into quarters.

Cut each cherry into quarters, then press them between paper towels until most of the liquid has been removed.

In a large bowl, combine the cookies and marshmallows.

Mix them together, letting the crumbs adhere to the sticky parts of the cut marshmallows. This will help keep them from clumping together.

Add the cherries and sweetened condensed milk.

Fold everything together.

At first, it’s going to look too dry and you’ll want to add more sweetened condensed milk. Don’t do it. Keep folding until the dry ingredients are fully coated, then let it rest for about 5 minutes. The cookies and graham crackers will start soaking up the moisture and everything will come together.

Lay out two sheets of plastic wrap side by side.

Spread half of the coconut onto the plastic wrap in a rectangular shape.

Dump the mixture onto the coconut, then sprinkle the remaining coconut over the top.

Use the plastic wrap to shape everything into a log about 12 inches long.

Roll the plastic wrap tightly around the log.

The tighter you wrap this, the better it’ll hold together when you slice it. You’re trying to squeeze out any air pockets. If you get it wrapped but it’s still loose, unroll another sheet or two of plastic wrap and wrap it around the loosely wrapped log. Then you can make it very tight.

Twist the ends firmly, then refrigerate for at least 6 hours – overnight is even better.

When it’s completely set, slice it into 3/4-inch rounds.

Microwave the melting wafers according to package directions and pipe it over the Fifteens.
