INGREDIENTS
2 cups heavy cream
2 cups sugar
1/3 cup butter
1 cup light corn syrup
1/2 Tbsp. banana flavoring
64 mini Nilla wafer cookies
Some white chocolate, for a drizzle
SUPPLIES
An 8×8 baking pan
Some parchment paper
A large saucepan
A spatula
A thermometer
A piping bag
DIRECTIONS
Line the baking pan with parchment paper.
Spray the parchment paper with a light layer of cooking spray and wipe off the excess.
Combine the cream, sugar, butter, and corn syrup in a large saucepan over medium-high heat.
Bring the mixture to a boil, then add your thermometer.
Cook until it reaches 248 degrees.
Remove the saucepan from the heat and quickly stir in the banana flavoring.
Pour the caramel into the lined pan and let it set for about 10 minutes.
Top it with cookies, then let it cool completely.
Temper or melt the white chocolate and pipe it over the caramel and cookies.
Let it rest on the counter until the white chocolate has set, then cut it into whatever size pieces you’d like.
