All the flavor of a Cherry Coke – no glass required!

Ingredients
Cherry Fudge
284g (10 oz) maraschino cherries
2 tbsp cherry gelatin
1 tsp cherry or vanilla extract
172g (¾ cup) butter
340g (12 oz) white baking chips
660g (3 cups) granulated sugar
158g (⅔ cup) heavy whipping cream
200g (7 oz) marshmallow creme
Coca-Cola Frosting
115g (½ cup) unsalted butter
1 tsp vanilla extract
18g (3 tbsp) unsweetened cocoa powder
88g (6 tbsp) Coca-Cola
454g (3.5 cups + 2 tbsp) powdered sugar
Directions
Drain the cherries and cut them into quarters. Pat with a paper towel until there isn’t any more moisture. Set aside.
Line a 9×13 baking dish with parchment or non-stick foil. Set aside.
Combine the butter, sugar, and heavy cream in a saucepan.
Bring it to a boil over medium heat, stirring frequently.
Once at a full boil, continue boiling for 3 minutes, stirring continuously.
Add the cherry gelatin.
Boil, stirring continuously, until the gelatin is completely dissolved (this should only take a few minutes).
Remove the pan from the heat and stir in the white chocolate.
Stir in the marshmallow creme and cherry or vanilla extract.
Fold in the maraschino cherries.
Pour the mixture into the 9×13 pan.
Let cool to room temperature and then refrigerate.
Wait until the fudge is chilled before you start the frosting.
Place the powdered sugar in a heat-proof bowl and set it aside.
Combine the butter, cocoa powder, and Coca-Cola over medium heat.
Bring it just to a boil, then pour it over the powdered sugar.
Whisk until it’s combined and smooth.
Add the vanilla extract and continue whisking to combine.
Immediately pour the frosting over the chilled fudge.
Use an offset spatula or spoon to gently spread the frosting over the top of the fudge.
Chill for 20 minutes or until frosting has set.
Cut into whatever size and shape pieces you’d like.
