INGREDIENTS
1 cup (312g) creamy almond butter
1 tablespoon agave nectar (or honey)
1/4 teaspoon vanilla extract
1 cups (100g) of oatmeal
1/2 cup (76g) of coconut flour
2 heaping scoops (60g) of chocolate protein powder
1/4 cup (60g) of unsweetened shredded coconut
A pinch of salt
1/2 cup (90g) of sugar-free semi-sweet chocolate chips
SUPPLIES
An 8×8 pan
Some parchment
A couple of bowls
A spatula
A whisk
A stand mixer
An offset spatula
DIRECTIONS
Line an 8×8-inch baking pan.
In the bowl of a stand mixer, combine the peanut butter, agave nectar, and vanilla.
In a separate bowl, mix the oats, coconut flour, protein powder, coconut, and salt.
Add the dry ingredients to the wet ingredients, mixing until a dough forms.
If the dough seems too dry, add coconut oil until it reaches the desired consistency.
Press the dough firmly into the baking pan.
Refrigerate for about 30 minutes to set.
Melt the chocolate chips, spread the chocolate over the mixture, and leave them on the counter to set.
Finally, cut the mixture into 16 2”x2” bars.
