INGREDIENTS

1/2 cup (135g) of natural peanut butter

1/2 cup (122g) of unsweetened applesauce

1 tablespoon of olive oil

1 egg

1 cup (140g) of whole-wheat flour

1/2 cup (68g) of powdered milk

1 cup (180g) of unsweetened carob chips

1 teaspoon of oil (coconut or vegetable)

DIRECTIONS

In a mixing bowl, combine the peanut butter, unsweetened applesauce, olive oil, and egg and mix on medium speed until smooth.

Add the flour and powdered milk, and beat it on low to incorporate the ingredients.

Cover the bowl and refrigerate it for about an hour to let it firm up.

Set your oven to 325 F and place the dough on a lined cutting board.

Cover it with another sheet of parchment, and roll it out to about ¼ to ½ inch thick.

Use a cookie cutter or knife to cut out your cookies.

Peel off the extra dough and save it for your next batch.

Transfer the cookies on the parchment to the baking sheet, and bake them for 10 to 12 minutes or until the edges begin to turn light brown.

Cool the finished treats on a cooling rack for about an hour or until they reach room temperature.

Add the oil to the carob chips and melt them in the microwave in 30 second increments. Don’t overheat this, or it will seize and you’ll have to start over with fresh carob chips.

Dip the cookies into the carob and place them on a lined cutting board to set.
