INGREDIENTS
1/2 cup (110g) of granulated sugar
1/4 cup (85g) of light corn syrup
1 Tablespoon of unsalted butter
3/4 cup (109g) of peanuts for the centers
1/4 teaspoon of vanilla extract
1/2 teaspoon of baking soda
1 cup (146g) of peanuts for the coating
SUPPLIES
A slow cooker
A spatula
A zip top bag
A peanut crusher
Two quarter sheet pans
Some parchment
A bench scraper
A shallow pan
DIRECTIONS
Set the cooker to high and add the butter, sugar, corn syrup, and vanilla. Stir slightly, then let the mixture cook for about an hour and a half.
Stir in 3/4 cup of peanuts into the melted sugar mixture and continue cooking on high for another 45-60 minutes.
Don a pair of oven mitts or gloves, then remove the crock from the pot and quickly stir in the baking soda.
Pour the mixture onto a baking sheet lined with parchment.
Use a spatula to spread it out a bit.
Cover the mixture with another sheet of parchment and use a second baking sheet to press down and flatten the mixture.
Allow the candy to cool completely at room temperature.
Crush 1 cup of peanuts.
Cut the candy into 1″ to 2″ squares.
Roll the squares of candy into balls and coat them with crushed peanuts by squeezing the peanuts into the candy.
