Spamdy Bars

Definitely the strangest recipe I’ve made, even for April Fool’s Day. Candied bacon is one thing, but chocolate-covered candied spam? Watch the video to get my take on it.

INGREDIENTS

1 12-ounce (340) can of SPAM

1/4 cup (60g) of brown sugar

1/4 cup (78g) of maple syrup

1 teaspoon of ground cinnamon

Another 1/2 teaspoon of ground cinnamon

1/4 cup (28g) of candied pecans

1/2 teaspoon of sea salt

1 1/2 cups (270g) of chocolate


SUPPLIES

A sheet pan

Some parchment paper

Tongs

A pastry brush

Some bowls

A cutting board

A sheet of Silpat

A cooling rack

A couple of precision dipping tools


DIRECTIONS

Heat the oven to 400°F.

Cut the SPAM 16 pieces and place them on a parchment-lined baking sheet.

In a small bowl, mix together the brown sugar, maple syrup, and 1 teaspoon of cinnamon to create a glaze.

Heat it in the microwave for a few seconds, then place it in a piping bag.

Pipe half of the mixture onto the Spam slices.

Bake for 15 minutes, then remove the slices from the oven, turn them over, and pipe the remaining glaze.

Bake for another 15 minutes, then move the slices to a cooling rack.

Finely chop the candied pecans and set them aside.

In a small bowl, mix the sea salt and 1/2 teaspoon of cinnamon, and set it aside.

Melt the chocolate, then dip a piece of candied spam into the chocolate, let it drain, and place it on the lined cutting board.

Immediately top it with the cinnamon salt mixture and the chopped pecans.

Repeat with the remaining spam slices, then leave them on the counter to set.
