INGREDIENTS
245g (1 ¾ cups) all-purpose flour
115g (½ cup) room temperature unsalted butter
275g (1 ¼ cups) granulated sugar
60g (¼ cup) heavy cream
1 tablespoon of vanilla extract
¾ teaspoon salt
284g (1 ½ cups) white chocolate
The topping of your choice (optional)
SUPPLIES
A baking sheet
A mixer
A cutting board
Some parchment paper
A scoop
A couple of precision dipping tools
DIRECTIONS
Spread the flour out on a baking sheet and bake it for 5 minutes at 350 degrees F. This step is optional, but it kills any pathogens that might be in the flour. Another way is to microwave the flour until the temperature reaches 180 degrees F.
Add the butter and sugar to a stand mixer and mix thoroughly.
Add the heavy cream and vanilla extract and beat until smooth.
Add the salt and flour and mix on low just until it’s incorporated.
Roll the dough into balls and place them on the lined cutting board.
Temper the chocolate, then dip a truffle center into the chocolate, allow the excess to drain, and return it to the lined cutting board.
Immediately sprinkle on the topping.
Continue with the remaining centers, then leave them on the counter to set.
