Pineapple Upside Down Fudge

INGREDIENTS

1 (14-oz.) can sweetened condensed milk

1/2 c. pineapple upside-down cake mix

2 1/2 c. white chocolate chips

1/2 c. chopped canned pineapple, drained and patted dry

8 maraschino cherries


SUPPLIES

8×8 baking pan

Some parchment paper

A large, microwave-safe bowl

A spatula


DIRECTIONS

Line an 8”x 8” baking dish and set it aside.

Prep the cherries by removing the stems. How many cherries you need depends on how large you want your fudge. If you want large pieces, you can use an entire cherry for each piece. I usually cut my fudge into one-inch pieces, so I’m cutting 8 cherries into eighths.

Pour the sweetened condensed milk and cake mix into a large bowl, stirring to combine.

Add the white chocolate chips, then microwave in 30-second intervals, stirring in between, until it’s fully melted.

Fold in the pineapple and pour the mixture into the lined baking dish.

Place cherries on top of the fudge and place in the refrigerator to set, at least 2 hours.

Remove the fudge from the pan and cut it into whatever size pieces you’d like.
