Hi, I’m Randy. Welcome to the Candy Kitchen.

In 2020, I retired from a 41-year career in forensic science. In the waning years of that career, I found myself making candy. It’s a rather amusing origin story that starts with an inattentive employee at my local Dixieline Lumber store. If you want more details, check out my episode on Habanero Fudge.

Retired, and with a lot of free time, I wondered if maybe I could start a YouTube channel and teach people how to make candy. I wanted people to know that making candy doesn’t have to be scary. Episode one was rough. So was episode two, and a bunch after that. The episodes are still available, though, because as bad as the videography, script-writing, and presentation was, the candy was pretty darn good.

Since then I’ve published over 270 episodes of Randy Makes Candy — fudge, truffles, caramels, copycats, keto confections, Easter eggs, and some things that no one had ever heard of, just because I thought they might be tasty.

I’m not just about results, though. I want to understand why things work, not just follow steps. When you know why chocolate seizes, or what cream of tartar actually does to sugar, or why coconut oil sets a filling without refrigeration — you stop being a recipe follower and start being a confectioner. That’s the goal.

The Candy Classroom is where the deep dives live. The recipes are where the fun is. Either way, I think you’ll find that making candy is a lot less mysterious than it looks.
