No need to travel to Australia for this tasty combination of chocolate, cherry, and coconut.
INGREDIENTS
1/2 cup (70g) of Maraschino cherries
1 1/2 cups (120g) of sweetened coconut
1/4 cup (76g) of sweetened condensed milk
1/4 Teaspoon of vanilla extract
1 cup (180g) of chocolate
Some red food coloring
SUPPLIES
A blender
A bowl
A spatula
A 6×6 baking pan
Some parchment
A cutting board
A couple of precision dipping tools
DIRECTIONS
Chop a couple of cherries and set them aside.
Blend the remaining cherries, coconut, milk, and vanilla.
Blend in as much coloring as you’d like.
Transfer the mixture to a bowl and fold in the chopped cherries.
Transfer to a baking pan, flatten the dough, and freeze it until it’s set.
Cut the dough into bars.
Melt or temper the chocolate, dip a bar into the chocolate, let the excess drain, then place it on a lined cutting board.
Repeat with the remaining bars, then leave them on the counter to set.
