Chocolate-covered Cherry Fudge

All of the flavors of chocolate-covered cherries in an easy-to-make fudge.

INGREDIENTS

1/2 cup (113 grams) of finely chopped maraschino cherries

1 fourteen-ounce can (397 grams) of sweetened condensed milk

10 ounces (285 grams) of good-quality milk chocolate chips

6 ounces (170 grams) of dark chocolate chips

1/4 cup (57 grams) of unsalted butter, cubed

1 1/2 teaspoons of vanilla extract

1/2 teaspoon of almond extract

A pinch of salt

3/4 cup (130 grams) of white melting chocolate

Some red sprinkles


SUPPLIES

An 8×8-inch baking pan

Parchment paper

A large, microwave-safe mixing bowl

A spatula

Paper towels

A piping bag


DIRECTIONS

Line an 8×8-inch pan with parchment paper and set it aside.

In a mixing bowl, combine the sweetened condensed milk, dark and milk chocolate, butter, and salt.

Microwave it for 30 seconds, stir it well, repeat until it’s smooth, then stir in the extracts.

Fold in the chopped cherries until they’re evenly distributed. Work quickly to avoid the mixture cooling and seizing.

Pour the fudge into the prepared pan and smooth the top evenly with the spatula.

Refrigerate for 2–3 hours, until fully firm.

Melt the white chocolate and drizzle it over the top.

Immediately scatter the red sprinkles over the fudge.

Let the drizzle set, then cut the fudge into whatever size pieces you’d like.
