Key Lime Pie Fudge

Sweet, tart, tangy, creamy, and crunchy – it’s a perfect treat for Pi Day…or any day!

INGREDIENTS

56g (4 tablespoons) of unsalted butter

55g (1/4 cup) of sugar

178g (1 1/4 cups) of crushed graham crackers

474g (3 cups) of white chocolate

1 (14-ounce) can of sweetened condensed milk

1/4 teaspoon of salt

2 tablespoons of finely grated lime zest

3 tablespoons of freshly squeezed lime juice


SUPPLIES

8×8 pan

Some parchment paper

2 microwavable bowls

Spoon or spatula


DIRECTIONS

Set your oven to 375 F.

Line the baking pan and set it aside.

Place the butter in a medium microwave-safe bowl and microwave it until it’s melted.

Once it’s melted, mix in the sugar and graham cracker crumbs.

Place the crumbs in the bottom of the lined pan and press them into an even layer.

Bake it for 5 minutes, then remove it from the oven to cool.

Place the white chocolate, sweetened condensed milk, and salt in a large microwave-safe bowl, and microwave it for 30-seconds.

Give it a good mix, then microwave it for another 30-seconds.

Repeat this until the mixture is completely melted and smooth.

Add the lime juice and zest to the mixture and give it another good mix.

Pour the fudge over the crust and smooth it into an even layer.

Put it in the fridge until it’s set, at least 2 hours, preferably overnight.

Remove the fudge from the pan and cut it into whatever size pieces you’d like.
