Mazapanes de Cacahuates

A perfect treat for CInco de Mayo…or any other day of any other month.

INGREDIENTS

1 1/2 cups of peanuts

1 cup of powdered sugar


SUPPLIES

A food processor

A 2-inch cookie cutter

A small scoop

A cutting board


DIRECTIONS

Place the peanuts in the food processor and blitz them into a powder. You want to go long enough to bring out some oil, because that’s what’s going to act as a binder, but don’t go too long, or you’ll have peanut butter.

Add the powdered sugar and continue processing until the mixture holds together when compressed.

You’re not looking for a dough here. Mazapan has a very crumbly texture, so don’t overprocess this.

Once you’ve reached the desired texture, scoop some of the mixture into your cookie cutter and use your fingers to press it down as firmly as you can.

If you can find something that fits perfectly into your cookie cutter, you can use it as a plunger to press the mixture into the cookie cutter, although you’ll still need to get in there with your fingers to really press it down.

When it’s as compressed as you can get it, gently push it out of the cookie cutter, then repeat until you’ve used up the remaining mixture.
