Oatmeal Coconut Fudge

Oatmeal and coconut do the heavy lifting in this delicious and super easy to make treat.

Old-fashioned oats contain soluble fiber and starch granules that, without the sustained heat and water of a full boil, stay mostly intact. That’s what gives this fudge a chew you won’t get from any standard fudge recipe.


INGREDIENTS

1 can (396g) of sweetened condensed milk

2 1/2 cups (425g) of white chocolate melting wafers

1/2 cup (110g) of brown sugar, packed

2 tablespoons (28g) of unsalted butter

1/4 teaspoon of salt

1 teaspoon of vanilla extract

1 cup (90g) of old-fashioned oats

1/2 cup (45g) of shredded sweetened coconut


SUPPLIES

A large microwave-safe bowl

A spatula

A lined 8×8 pan


DIRECTIONS

Combine the sweetened condensed milk, white chocolate melting wafers, brown sugar, butter, and salt in a large microwave-safe bowl.

Microwave for one minute, then stir. Continue in 30-second intervals, stirring after each, until the mixture is smooth and fully combined.

Stir in the vanilla extract.

Fold in the oats and coconut.

Pour into a lined 8×8 pan and spread evenly.

Let set on the counter or in the refrigerator until firm.
