My mom’s favorite candy bar…in a truffle.
As Mother’s Day approached, I asked my mom what she’d like me to make. She said something with peanuts, caramel, nougat, and chocolate. That’s basically a Snickers bar, and I’ve already made those, so I decided to give her the same flavors in a different package.
These truffles start with a peanut butter center – made with peanut butter powder, powdered sugar, and marshmallow fluff – with crushed dry roasted peanuts folded right in. Each one gets dipped in milk chocolate and finished with a few caramel bits on top. The result tastes remarkably like a Snickers bar, but with more chew in the center and a little extra elegance on the outside.
The peanut butter powder delivers full peanut butter flavor without the fat that makes truffle dough sticky and hard to handle. If you’ve never used it, this is a great introduction.
INGREDIENTS
1 cup + 2 Tbsp (125g) of marshmallow fluff
1/2 cup (60g) of peanut butter powder
3/4 cup (90g) of powdered sugar
1/2 cup (65g) of dry roasted peanuts
2 cups (340g) of milk chocolate candy melts
Some caramel bits
A rolling pin
A zip-top bag
A mixing bowl
A spatula and/or gloves (optional)
A parchment-lined cutting board
A couple of precision dipping tools
Crush the peanuts using a zip-top bag and a rolling pin. Set those aside.
In a mixing bowl, combine the marshmallow fluff, peanut butter powder, and powdered sugar. Mix thoroughly.
Fold in the crushed peanuts.
Roll the dough into cylinders, then pinch off pieces and roll them into balls. Place them on a parchment-lined baking sheet.
If the dough is too sticky, dust your palms lightly with a little extra powdered sugar.
Melt the candy melts according to the package directions.
Dip a truffle center into the melted chocolate and drain the excess.
Return it to the baking sheet and immediately add a couple of caramel bits to the top.
Repeat with the remaining centers.
